Ooh, my favorite callings have been those in which I am in charge of choosing songs.
Opening: Let Zion in Her Beauty Rise
Sacrament: As Now We Take the Sacrament
Rest: The Time is Far Spent (No jokes about the title allowed)
Closing: Precious Savior, Dear Redeemer
Opening: High on the Mountain Top
Sacrament: In Humility, Our Savior
Rest: Praise God, from Whom All Blessings Flow
Closing: Thy Spirit, Lord, Has Stirred Our Souls
I have opinions about what sort hymn is appropriate for certain times. Also, there are good hymns that just aren't very conducive for congregational singing and are better off left for certain occasions and/or for choirs.
You have opinions? How surprising. I like your choices.
Do you have to plan the songs around specific topics? Our Bishopric has planned the weekly topics for the entire year (probably by last December) and the songs have to kind of go around that. However, if I could pick whatever songs on whatever days I would probably do these:
Week 1
Opening Hymn: O Thou Rock of Our Salvation
Sacrament Hymn: How Great the Wisdom and the Love
Rest Hymn: Arise, O God, and Shine (but only if it is played at an appropriately fast tempo
Closing Hymn: Come, We That Love the Lord
Week 2
Opening Hymn: Come, Rejoice
Sacrament Hymn: There Is a Green Hill Far Away
Rest Hymn: Know This, That Every Soul Is Free
CLosing Hymn: Go Forth With Faith
The lady in our ward who picks the hymns has done an awesome job of mixing well known and lesser known hymns. I have really appreciated her hymn selections because we have sung some hymns that aren't usually sung, but I really like.
